I’ve worked out the price of this meal per portion based on my normal shop at @asda and the exact measurements of the ingredients used in the recipe. . Ingredients . 500g chicken (diced) 1 red onion (diced) 3 peppers (diced) 2 tbs Fajita seasoning- I used @schwartzuk 1 tbs smoked paprika 1tsp salt (or to taste) 1tbs tomato purée 200ml chicken stock 120ml elmlea light single cream . 500g potatoes (cubed) 2 tbs fajita seasoning 1 tsp salt 120g cheese- I used a mix of mozzarella, cheddar and Red Leicester. . Method. . Mix the cubed potatoes with the seasoning and pop them in the airfryer/oven for 15-20 minutes. Meanwhile cook off the chicken onions and peppers along with the seasoning. Once cooked add in the tomato purée and cook for a minute or so and then add in the stock and cream. Cook until it’s formed a thick sauce and then add in the cooked potatoes. Give it a good mix, top with cheese and pop under the grill until golden and bubbling. Serve and enjoy. .
