Fig, Lime + Coconut Tart 🍋 (no bake)  I love making raw desserts. For me, they are the easiest recipe to develop because I used to make so so many. For this one, I would actually double the coconut cream recipe if your the sort of person who likes more “icecream to brownie ratio”, if you like it the other way, then keep the recipe as is.  Base: • 10 soaked medjool dates, seeds removed  • 1 cup almond meal • 1 cup walnuts  • 1 cup coconut shreds / desiccated coconut  • 1 tsp vanilla extract  • pinch of salt  Coconut cream layer • 1 can coconut cream  • Zest and juice of one whole lime  • 2-3 tbs maple syrup (sweeten to your taste)  • 1 tsp vanilla extract  • pinch of salt  Topping: 10 fresh figs!  Method: 1. Place all of your base ingredients in a food processor and mix until combined. If your like me, you can use a food processor, it’s just a bit of a nightmare, you’ll need to keep shaking it and mixing it. 2. Press the combined base into a tart tin, until the bottom and sides are evenly coated. 3. Place all the coconut cream ingredients into a blender and blend for 60 seconds or until we’ll combined. Pour this into the tart tin on top of the base.  4. Place into the fridge or freezer to start setting. 5. NOW this is important! Let it set about 3/4 of the way, and then put your figs on top. You can do it before you put it in the freezer or fridge however they will sink into the mixture. So cut the figs into small wedges and place them around the tart from the outside moving in.  6. Then place back into the fridge or freezer to sat. The fridge will likely take 6 to 8 hours to properly sat in the freezer 1 to 2 hours.
