Vegan Vanilla & Blueberry Danish 🫐 _ for this pastry shape i laminated the croissant dough with vegan butter like i normally do 🧈 the dough was left to ferment in the fridge overnight. for the dough recipe check out my croissant dough video 🤗 i made 1 double 🔀 and 1 single fold ↪️ to achieve these crispy layers for the danish shape i cut 12x12 cm squares and shaped them as shown in the video 🟨 after proofing them for around 2 hours at 28 °C, i topped them with the vegan vanilla custard and baked the pastry for 15 min at 175 °C fan assisted i then brushed them with a simple syrup and baked for another 3 minutes until the top layers were nicely caramelised and crispy🥐 the fresh blueberries on top are a nice tangy balance to the sweet and rich croissant pastry 🥰 #croissants #croissant #danish #vegan #plantbased #blueberry #baking #vanilla #viennoiserie #pastry #patisserie
