While the veggies are roasting, mix 1 lb ground turkey with 1 tbsp white vinegar, 2 tsp chili powder, 2 tsp paprika, 2 tsp garlic powder, 1 tsp cumin, 1 tsp coriander, 1 tsp oregano, 1/2 tsp salt, 1/2 tsp cayenne pepper. Heat 2 tbsp olive oil in a pan over medium heat. Add the ground turkey mixture and break apart into smaller pieces and cook until golden brown. Once cooked through, remove from heat & set aside. Once the veggies are cooked through, add the cooked turkey mixture into the baking pan and stir to combine. Add a drizzle of maple syrup if desired and place back into the oven for a few minutes for the flavors to mix together.
