had to head back to Acadie after finding this awesome vintage cookbook. ployes are essentially an unflipped buckwheat pancake, feels so weird to not flip it! buckwheat was used because it was a reliable crop able to withstand the short growing season and less than ideal conditions. it’s got a deep flavour. it’s slightly earthy, a lil funky (all good things btw!) and is just as comfortable with delicious cretons (my fave) as it is with molasses, or simply butter. cretons are less New Brunswick specific and are rooted in Quebecois culture. that being said, cretons are also deeply embedded in Acadian culture. the more the merrier really. truly 2 foods that are specific to one single region in North America (ployes are big in Maine too!) and another gift from Acadians to us. hopefully I did it justice!!! 9.39471/10. the toe tappin song is "le monde a bien changé by 1755. awesome track and a perfect ploye eating tune. #suppersready #newbrunswick #acadie #canadianfood #vintagerecipes
