Cold and Flu Chicken Broth Recipe • 500 gm chicken wings (fresh or frozen) • 1 medium onion (roughly diced) • 2 medium carrots (peeled and roughly diced) • 5 garlic cloves • 5 cm piece of ginger • 5 cm piece of turmeric (or 1/2 tsp turmeric powder) • a handful of parsley or coriander stalks • 1 cinnamon stick • 1/2 tsp black peppercorns • 1/2 tsp cloves • 3 bay leaves • 1&1/2 tsp salt • 3 liters water *for the garnish • chopped parsley or coriander • black pepper powder • lemon juice 1. Slightly crush garlic, ginger and turmeric in a mortar and pestle. Alternatively you can finely grate them. 2. Add everything into a big pot and bring it to a boil. Then cover with a tilted lid and let it simmer for one hour. 3. Strain the broth through a colander. Let the chicken slightly cool down, then separate the meat from the bones and shred roughly with your hands. Add the chicken meat back to the pot. 4. You can warm it up again before serving.
